- 2 teaspoons of ground coriander
- 1 tablespoon of tomato paste
- 4 cups of chicken stock
- 1 cup of raisins
- 1 cup of sliced almonds
- 2 bay leaves
- 1 cinnamon stick
- Salt, to taste
- Black pepper, to taste
- Vegetable oil
Instructions:
Now, let's start cooking! Follow these steps:
- Wash the rice well and soak it in water for 30 minutes.
- In a large pot, heat some oil over medium-high heat.
- Add the onions and cook until they become soft and golden brown.
- Add the chicken and cook until it turns brown on all sides.
- Add the garlic, ginger, cumin, and coriander. Cook for another 2-3 minutes.
- Add the tomato paste, bay leaves, and cinnamon stick. Stir well.
- Drain the rice and add it to the pot. Stir well.
- Add the chicken stock and bring it to a boil.
- Add salt and black pepper to taste. Reduce the heat to low, cover the pot and let it simmer for 20 minutes.
- Uncover the pot and add the raisins and almonds. Stir well.
- Cover the pot again and let it simmer for another 10 minutes or until the rice is fully cooked.
- Remove the cinnamon stick and bay leaves before serving.
